As a young person (24 y/o) with more than one disabling autoimmune disease, it has proven unfeasible for me cook on a regular basis, no matter how much I love to cook. After spending too long wasting money and getting even more GI symptoms from restaurant food, I decided to make a change and find a low FODMAP meal prep service in the area. Thank goodness Taylor delivers to LA county because there are very few low FODMAP meal prep services in existence, let alone in Southern California. Taylor is very professional, accommodating, responsive, and understanding. She has recreated some of my favorite meals that I thought I'd never get to eat again, staying true to the original flavors while magically reconfiguring the ingredients so I don't get sick. Now, when I'm exhausted out of my mind after a doctor's appointment on the other side of the city and battery of invasive diagnostic tests, I at least have a delicious lunch to look forward to that agrees with my GI tract. I'll never go back to expecting the undeliverable from myself when I can depend on Taylor to keep me nourished.
Her ability to create low FODMAP versions of my favorite foods, like steak fajitas, chicken soup, beef and broccoli, and chicken curry, has given me a new perspective on life with multiple chronic illnesses. While I must live my life on very different terms than most 24 year olds, by seeking the help I need from people who are equipped to provide it I can still get my needs met and find joy in a life that often feels beyond overwhelming. It's very comforting to know that no matter how soul-crushing life can be, there's still a warm bowl of chicken soup with kale and wild rice waiting for me at the end of the day.
